I’ve been making homemade enchiladas since our time living in Morocco, and over the years, they’ve become an absolute family favorite—so much so that they’re the #1 most requested birthday meal for all three of our kids! Now, I’ll be the first to admit these aren’t neccessarily authentic enchiladas, but trust me, they are delicious.
A few months ago, when Parker moved out, I sent him off with our can opener (without realizing it!), and when it came time to make these enchiladas, I found myself can opener-less with a can of tomato paste staring back at me. In a pinch, I used pizza sauce instead, and now Hailey has officially declared that version her favorite! Whether you stick to the classic or switch things up, this recipe is easy, fun to make, and always a crowd-pleaser.
