I’m all about small things that pack a big punch! (As a proud 5’1″, I can relate!) These Pebernødder, or Danish Gingersnaps, are bursting with flavor, super fun to eat, and totally addictive. We first discovered these little bites of magic while living in Copenhagen, Denmark, and they’ve been a holiday favorite ever since!
In Denmark, it’s a tradition to have bowls of these everywhere during Christmas. I mean everywhere. Our first Christmas there, we were blown away by how every bank, post office, shop, and department store had little bags of Pebernødder for visitors to grab from and enjoy. Jack fell in love instantly and made it his mission to eat one from every bowl—because turning down a cookie might offend the entire country, right?
This recipe is one of the easiest I’ve ever shared, and I just know you’ll fall in love with these little cookies as much as we have.
